At the summit sits DiverXO, Dabiz Muñoz's irreverent three-star in Chamartín, the only three-star restaurant in Madrid and one of the most singular dining experiences in Spain. Below it, seven kitchens hold two stars: Deessa, Quique Dacosta's room at the Mandarin Oriental Ritz; Smoked Room by Dani García; Paco Roncero at the Casino de Madrid; DSTAgE; Coque, Mario Sandoval's Chamberí cellar; and Ramón Freixa Atelier, back in the guide this year.

The one-star field is broad and eclectic, spanning Kabuki Wellington, A'Barra, Gaytán, La Tasquería, Saddle, El Invernadero, Quimbaya, RavioXO, Ugo Chan, Desde 1911, and the 2026 newcomers Èter and EMi, among many others.
